PEPERONATA 
1 tbsp. olive oil
Salt and black pepper
1 med. red pepper, quartered
1 clove garlic, finely chopped
1 med. green pepper, quartered
1/3 c. tomato sauce
1 sm. onion, diced lg.
1 1/4 c. Parmesan cheese, coarsely grated

Preheat oven to 400 degrees. Saute pepper and onion in oil in a skillet on medium heat for 4-5 minutes. Season with salt and pepper. Put pepper and onion in a casserole dish. Sprinkle with garlic.
