PASTA CON AMORE 
12 oz. ziti or penne pasta
3 oz. olive oil
Chopped onions or scallions
1 lg. ripe tomato, chopped or crushed
2 tbsp. capers or green olive, chopped
1 tbsp. dry basil or fresh
1 c. Ricotta
4 oz. Mozzarella, shredded
Sm. red pepper, chopped
Salt and pepper

Cook onions or scallions in olive oil; add red peppers, chopped tomato (or crushed), capers. Add basil, salt and pepper. Cook until you feel it is done.

Cook pasta; drain. Place in baking dish. Mix Ricotta with Mozzarella and place on top of pasta. Bake until Mozzarella is ready. You may add meat which you have already cooked - pork, veal, chicken, etc.
