BUTTERSCOTCH YAMS | |
6 med. yams, cooked, peeled & quartered or 2 (17 oz.) cans yams, well drained 1/2 c. Karo light or dark corn syrup 1/2 c. brown sugar, packed 1/2 tsp. salt 2 tbsp. butter 1/2 tsp. cinnamon 1/4 c. heavy cream or half & half Arrange yams in single in 13 x 9 x 2 inch baking dish. Bake at 325 degrees. Combine remaining ingredients. Stir constantly; bring to boil over medium heat for 5 minutes. Pour over yams. Bake for 15 minutes, basting frequently. |
