BOHEMIAN SAUERKRAUT 
3/4 lb. bacon
1 c. onion, diced
1 tsp. caraway seeds
1 (#10) can sauerkraut
4 tbsp. brown sugar
1 lg. potato, grated
Smoked sausage, kielbasa, etc. (optional)

Saute bacon, onion and seeds. Add sauerkraut and water to cover and meat, if desired. Cook 45 minutes. Stir in brown sugar and potato. Cook 15 minutes more; potato thickens juice. 10 servings.
