CHICKEN AND RICE CONQUESO 
1 lb. Velveeta cheese
1 can Rotel diced onions, peppers, and tomatoes
Chicken pieces
Rice (any kind will do)

Broil chicken pieces until ALMOST done. Prepare rice as directed. Cut Velveeta cheese into small pieces. Place in glass bowl and mix in Rotel. Cover and place in microwave for 9 minutes on power level 7.

Place rice in oblong glass dish, place chicken on top and then pour conqueso sauce on top of chicken and rice. Place in preheated oven uncovered for no more than 10 minutes. Oven temperature should be no more than 375 degrees. Serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
