“WHOLE WHEAT CRACKERS” IS IN:

WHOLE WHEAT CRACKERS 
1 cup wheat bran
1 1/4 cups unbleached flour
1/4 cup whole wheat flour
1/2 cup sesame seeds
1/2 teaspoon salt
1/2 teaspoon baking soda
3 tablespoons wheat germ
1 cup water

Preheat oven to 300°F.

In a large mixing bowl, combine dry ingredients and stir until thoroughly mixed. Add water and mix until you have a soft dough. Roll dough out on a work surface dusted with flour to a 1/8-inch thickness.

Cut dough into 2x4-inch rectangles. Prick with a fork to make holes to keep the crackers from puffing up.

Grease a cookie sheet with vegetable oil or shortening and bake crackers for 10 minutes at 300°F or until crackers are crisp. Cheese, garlic, onion or other spices may be added to taste. Herbs can be rolled over the top for extra flavor. We like a combination of basil, rosemary, and Parmesan cheese. Spray tops of crackers with olive oil just before baking.

Cool on a wire rack. After crackers have cooled completely, store in an airtight container or plastic bag. Makes about 36 crackers.
