POTATO BURGERS 
1 1/2 c. cooked, diced potatoes
1/4 tsp. pepper
1 tbsp. chopped parsley
1 lb. ground round
1 tsp. salt
1 tbsp. grated onion
1 (8 oz.) can tomato sauce

Toss together potatoes, seasonings, onion and parsley with 1/4 can tomato sauce. Divide beef into 8 thin patties. Top 4 of the patties with equal amounts of the potato mixture. Place remaining patties over fillings. Pinch edges together well. Brown burgers in hot greased skillet. Turn and pour remaining tomato sauce on patties. Cover and simmer for 10 minutes. Makes 4 servings.
