VEGETARIAN CHILI 
1 green pepper
1 red sweet pepper
8 scallions
1 med. chopped onion
10 med. sliced mushrooms
1 (16 oz.) can pinto beans
3 (16 oz.) can kidney beans
1 (12 oz.) can V-8 juice
1/2 tsp. cayenne pepper
1/2 tsp. black pepper
Salt to taste
3 garlic cloves, chopped
1/2 tbsp. chili powder
1 (24 oz.) can diced tomatoes

Dice peppers, onions, and scallions. Saute in small amount of oil. Add beans, V-8 juice, and tomatoes. Add spices. Cook slowly until done.
