MUFFINS 
1 egg
1 c. milk
1/4 c. vegetable oil
2 c. flour
1/4 c. sugar
1/2 tsp. cinnamon
1/2 c. chopped nuts
3/4 c. any flavor jam or preserves

Beat egg; stir in milk and oil. Sift together dry ingredients and add to egg mixture (will be slightly lumpy). Fold in nuts. Fill paper-lined muffin cups 1/3 full; drop 2 level teaspoons preserves into each; fill to 2/3 full with more batter. Bake 20 minutes at 400 degrees. Remove from pan immediately.
