MUSTARD - TOPPED FISH 
4 sm. halibut, 1" thick
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. butter, melted
2 egg whites
1/4 c. grated Parmesan cheese
2 tbsp. Dijon style mustard
2 tbsp. chopped green onions (with tops)

Sprinkle fish steaks with salt and pepper. Place fish on rack in broiler pan; brush with 1 tablespoon of the butter. Set oven control to broil and/or 550 degrees. Broil fish with tops 2-3 inches from heat until light brown, about 5 minutes. Turn; brush with remaining butter. Broil until fish flakes easily with fork, 5-8 minutes.

Beat egg whites until stiff but not dry. Fold in cheese, mustard and onions. Spread mixture over fish. Broil until tops are golden brown, about 1 1/2 minutes. 8 servings - 140 calories each.
