NEW YEAR'S SOUP 
2 c. soup mix
1 lb. ham, diced
1 clove garlic, minced
4 carrots, sliced (not too thin)
1 (16 oz.) can tomatoes, undrained, chopped
1 (10 oz.) can tomatoes and green chilies, undrained (opt.)
2 qts. water
1 lg. onion, chopped
1/2 to 3/4 tsp. salt
2 ribs celery, diced

Sort and wash 2 cups of bean mix; place in large kettle or Dutch oven. Cover with water 2 inches above beans, and soak overnight. Drain. Add all ingredients, except tomatoes and cover and bring to a boil. Reduce heat and simmer 1 1/2 hours or until beans are tender. Add tomatoes and simmer 30 minutes longer. Stir occasionally. ENJOY!

1 lb. black eyed peas
1 lb. white beans
1 lb. turtle beans (gourmet section)
1 lb. kidney beans
1 lb. split peas
1 lb. navy beans
1 lb. baby Lima beans
1 lb. barley pears (cereal section)
1 lb. pinto beans
2 lb. lentils
