ORANGE PASKA 
2 cakes yeast
2 1/2 c. lukewarm milk
10 1/2 c. flour
6 eggs
1 1/4 c. sugar
1/2 c. orange juice
Grated rind of 1 orange
1 tbsp. vanilla
1 tsp. salt
3/4 c. melted butter
2 c. raisins

Crumble yeast into milk. Stir in 3 cups flour. Mix well. Cover. Let rise 2 hours. Beat 5 egg yolks with sugar until light and fluffy. Beat 5 egg whites separately. Add yolks and whites to first mixture plus orange juice, vanilla, salt, remainder of flour, butter, and rind. Add raisins. Knead until bubbles form and pop - dough is smooth and elastic (about 15 minutes).

Place in greased bowl. Let rise 2 hours. Punch dough down. Let rise again. Punch dough again. Fill greased pans 1/3 to 1/2 full. Let rise 1 1/2 hours. Bake at 350 degrees for 25 to 30 minutes. Mix 1 egg and 1 tablespoon water. Baste bread last 2 minutes of baking time.

Note: Coffee cans make good baking pans. You can have extras for giving to other people. Designs such as crosses or trims may be made from small scraps of dough and placed on top with a dab of water before baking.
