POT ROAST WITH APRICOTS 
1 lb. dried apricots
4 c. water
2 onions, minced
3 lbs. center cut roast beef
Olive oil
1 tsp. salt
1 bay leaf
1 tbsp. lemon juice
2 tbsp. brown sugar
1 tsp. cinnamon

Wash apricots and soak in the water for 1 hour. Brown meat and onions in olive oil. Add salt, bay leaf, lemon juice, sugar, cinnamon and apricots with water. Cover and cook over low to medium heat for 2 1/2 hours or until meat is tender.
