INDIA POTATOES AND TOMATOES 
1/2 tsp. mustard seeds
3 tbsp. vegetable oil
3 large potatoes, cooked, peeled and diced
3 medium tomatoes, finely diced
2 tsp. minced green pepper
1 tsp. turmeric
1/4 tsp. grated ginger
pinch of cayenne
1 tsp. salt
1 tsp. chopped coriander leaves

Fry mustard seeds in hot oil (be careful they can burn quickly). Add diced potatoes and fry 5 minutes. Add tomatoes, green pepper, turmeric, grated ginger, cayenne, salt and coriander leaves. Cook slowly until tomatoes are done. Remove from fire and serve hot.
