FRESH TOMATO - POTATO SOUP 
6 lg. tomatoes, peeled
6 potatoes, peeled and quartered
A few fresh basil leaves
1 lg. onion, chopped small
Salt and pepper to taste
2 tbsp. olive oil
1 qt. water

Heat all ingredients to boiling and simmer, uncovered, until potatoes are cooked, about 40 minutes. Put in blender and puree just until creamy for a thick soup. Serve garnished with a sprinkling of Parmesan cheese on the soup.
