POTATOES AND GREEN BEANS WITH
SUN DRIED TOMATOES
 
4-5 red potatoes, cooked in skins, cubed
1/4 lb. fresh green beans, steamed
3-4 tbsp. olive oil from tomatoes
1/2 c. sun dried tomatoes, packed in olive oil
1/2 c. green olives
1/2 c. black olives
3 tbsp. Parmesan cheese (optional)
1 c. red onion, sliced

Saute red onion in olive oil for 2 minutes. Add the cooked potatoes, the green beans, add the olives, heat through. Sprinkle with Parmesan cheese.
