GAZPACHO (COLD SOUP) | |
6 slices thin sliced bread 3 very ripe tomatoes, chopped 1 chopped green pepper 1 chopped cucumber 4 tbsp. olive oil 2 tbsp. wine vinegar 2 cloves garlic 1 tsp. ground cumin (to taste) 2 tsp. salt 1/2 qt. water Into mixing bowl, put bread slices diced, tomatoes, cucumber, pepper, olive oil, water, vinegar, salt, garlic (mashed in mortar with cumin). Let stand 1 hour, then puree in blender 15 seconds. Strain into large soup bowl. Chill at least 1/2 hour. Serve on side, small bowls of green pepper chopped, tomato diced, cucumber diced, bread croutons, cooked bacon, crumbled, onion chopped, boiled egg chopped, sour cream. To be sprinkled on top. |
