GOOD AND QUICK CRAB DISH 
1/4 c. butter
1/4 c. flour
2 c. milk
1 c. your favorite grated cheese (Swiss, Cheddar or Provolone are great)
2 eggs, beaten
1 lb. crab meat
2 tbsp. butter
1/4 c. cracker crumbs
Salt and pepper to taste

Melt 1/4 cup butter, add flour and mix until smooth paste; slowly stir in milk. Cook until thickened. Add cheese; stir until melted. Add eggs and crab. Pour into greased 1 quart casserole.

Combine 2 tablespoons butter and cracker crumbs sprinkled over top. Bake at 350 degrees for approximately 30 minutes. Serves 2-4.
