BEEF AND RICE FLORENTINE 
3/4 lb. ground beef
1 tbsp. oil
1 c. water
1 tsp. salt
1 1/2 c. quick cooking rice, uncooked
1 tsp. finely diced onion
1 (10 oz.) pkg. chopped spinach
1 med. tomato, diced
1 tsp. oregano
1 tsp. grated Parmesan cheese

Brown beef and onion in oil, leaving meat in bite size chunks. Push meat mixture to side of pan and add spinach, water, tomato, salt and oregano. Break up spinach and bring to a boil. Stir in rice, cover pan, remove from heat and let stand five minutes. Sprinkle with cheese and serve. Makes 4 servings.
