CHICKEN SCAMPI | |
1/2 c. butter 1/4 c. olive oil 1/4 c. finely chopped green onions 1 tbsp. minced garlic 2 tbsp. lemon juice 2 lb. chicken breasts, boned, skinned, cut into 1/2 inch pieces 1 tsp. salt 1/2 tsp. fresh ground pepper 1/4 c. minced parsley 1 tomato, chopped Buttered noodles or cooked rice In skillet, heat together butter and olive oil and saute green onions and garlic. Add lemon juice, chicken, salt, pepper and parsley. Continue cooking, stirring constantly for 5 to 8 minutes or until chicken is done. Add tomatoes and heat through. Serve over buttered noodles or hot rice. Serves 4. |
