MICROWAVE HEUVO RANCHEROS | |
1 each corn tortilla 1 lg. egg Salsa or taco sauce 1/4 c. Cheddar or Jack cheese, shredded Put tortilla on plate. Break egg on center; pierce yolk with fork or toothpick. Cover loosely with wax paper. Microwave on MED-HIGH for 45 - 60 seconds until white is set around edges. Spoon salsa on. Sprinkle with cheese. Microwave uncovered 30 - 45 seconds until white near center is opaque but not set. Let stand 1 minute until egg is fully set and cheese melted. Serves 1. |
