PARMESAN POTATOES 
1/4 c. flour
1/4 c. grated Parmesan cheese
3/4 tsp. salt
1/8 tsp. black pepper
6 lg. potatoes, peeled & cut into 8ths
1/3 c. melted butter

In a paper bag, shake together flour, cheese, salt and pepper. Moisten potatoes slightly with a little water. Add potatoes to bag, a few at a time. Shake to coat well.

Meanwhile, melt butter in 9 x 13 inch baking pan while preheating oven to 375 degrees. Arrange coated potato wedges in hot melted butter in a single layer. Turn to coat potatoes with butter. Bake, uncovered in preheated 375 degree oven about 1 hour, turning potatoes once, or until golden and crispy on all sides and tender inside. Sprinkle with parsley before serving.
