MICROWAVE ITALIAN MEATBALLS 
1 lb. ground beef
1 egg
1/2 c. cracker crumbs
1/2 c. grated Parmesan cheese
1 to 2 cloves garlic, pressed or finely chopped
1 tbsp. dried parsley flakes
1/2 tsp. dried oregano leaves
1/4 tsp. whole thyme leaves
1/2 tsp. salt
1/4 tsp. pepper
1 (16 oz.) can tomatoes, chopped
1 c. grated Parmesan cheese

Combine all ingredients except canned tomatoes and last 1 cup grated Parmesan cheese, in a medium mixing bowl. Shape into 24 (1 1/4 inch) meatballs.

Arrange meatballs in a 10-inch round baking dish. Microwave covered at time "cook" (power level 7) for 7 to 9 minutes or until meatballs are nearly done. Pour chopped tomatoes over meatballs and sprinkle with 1 cup grated Parmesan cheese. Cover, microwave at power level 7 for about 6 minutes or until heated through. Makes 4 to 5 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
