SPINACH SOUFFLE 
1 (10 oz.) pkg. frozen chopped spinach
1 can cream of mushroom soup
Crushed Cheese Crackers
2 eggs, beaten
Melted butter

Thaw and thoroughly drain the Spinach. Add beaten eggs, soup and butter, put into buttered casserole and cover the top with cheese cracker crumbs. Bake in preheated oven at 325 degrees for 45 minutes.
