EGGPLANT CASSEROLE 
Eggplant
1 can cream of mushroom soup
1/4 lb. shredded Mozzarella cheese

Preheat oven to 350 degrees. Peel eggplant and slice. Arrange eggplant in casserole dish. Cover with cream of mushroom soup. Sprinkle Mozzarella on top. Cover casserole dish with lid. Bake at 350 degrees for 45 minutes. (Eggplant should be tender and cheese golden).
