HOT SPINACH MOUSSE 
6 tbsp. butter
6 tbsp. flour
2 c. milk
1/2 tsp. salt
1/8 tsp. white pepper
1 tsp. Worcestershire sauce
2 tsp. onion juice (or 1 sm. onion, chopped)
1 c. mayonnaise
Juice of 1 lemon
Few drops of green coloring
1 1/2 c. chopped, cooked spinach (1 package frozen)
4 lg. eggs, (5 to 6 small)
1/2 c. fresh grated bread crumbs

Make cream sauce melting butter, adding flour, milk, salt, pepper, Worcestershire sauce and onion juice. Cook and stir with wire whisk until sauce is smooth and comes to boil. Cool a few minutes. Add mayonnaise, lemon juice and green coloring. Add spinach, beat eggs well and add. Add crumbs. Pour into buttered 10 inch ring mold or buttered 8 x 10 inch cake pan. Bake in preheated oven 325 degrees for 45 minutes to 1 hour, until firm. Serves 4 to 6. Can also be made with broccoli.
