SPINACH HOT HORS D'OEUVRES 
2 pkgs. frozen chopped spinach
1 lg. onion, chopped
4 eggs (equiv. Egg Beaters)
1/2 c. butter (low fat can reduce)
1/2 tsp. garlic salt
1/4 tsp. salt
1/2 tsp. thyme
1/2 c. Parmesan cheese
2 c. Pepperidge Farm stuffing mix

Cook and drain spinach. Mix all ingredients together. Chill 30 minutes (longer makes it easier to work with). Form into small serving size balls. Bake 15 minutes at 350 degrees on greased cookie sheet (low fat use Pam). Enjoy!
