CRUNCHY OATMEAL COOKIES 
1 c. Crisco or butter
2 c. sugar (1 white, 1 brown)
1 egg
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla (more if desired)
1 1/2 c. oats
Chopped nuts and coconut if desired

Cream Crisco and sugars. Add egg and vanilla. Add sifted dry ingredients; mix just until blended. Add oats and nuts. Shape into balls and flatten with fork. Bake at 375 degrees about 12 minutes. Makes 4-5 dozen.
