TEXAS STYLE BARBECUED CHICKEN 
12 fryers, quartered (2 to 2 1/2 lbs. each)

BBQ SAUCE:

2 3/4 c. butter
2 3/4 c. lemon juice
2 3/4 c. Worcestershire sauce
2 3/4 c. cider vinegar
2 3/4 c. catsup

Clean chicken well. Arrange, skin side up, in single layer in two 12x18 inch shallow pans. Tuck under broiler (6 inches from heat) for 5 minutes or place in 400 degree oven until golden brown. Reduce oven heat to 325 degrees.

To prepare sauce: Melt butter in saucepan. Add lemon juice, Worcestershire sauce, vinegar and catsup; bring to a boil, stirring frequently. Let boil 1 minute. Pour over chicken. Bake 1 hour, basting frequently with sauce. Makes 48 (1/4 chicken) portions.
