GOLDEN MEATBALLS 
1 lb. ground beef
1/2 c. soft bread crumbs
1 egg
1 tsp. salt
2 tbsp. butter
2 c. cooked rice
1 c. sliced carrots
1/2 lb. Velveeta cheese spread, cubed
1/2 c. chopped green pepper
1/2 c. milk
1/4 c. chopped onion

Combine meat, bread crumbs, egg and salt; mix lightly. Shape into 12 medium meatballs. Brown in butter. Combine meatballs and remaining ingredients in a shallow 2-quart casserole. Cover and bake at 350 degrees for 30-35 minutes. Yield: 4-6 servings.
