“CHERRY PECAN CHEWS” IS IN:

CHERRY PECAN CHEWS 
A Rich, Chewy Cookie.

3/4 cup shortening, melted (Crisco)
1/2 cup (1 stick) butter, melted
8 egg whites
2 1/4 cups sugar
2 tsp. salt
2 tsp. vanilla
2 1/2 cups sifted cake flour
1 1/2 cups chopped pecans
1 1/2 cups chopped candied cherries

Preheat oven to 350°F.

Beat egg whites until frothy. Add sugar, salt, and vanilla and beat until mixture forms soft peaks. Add flour and blend well. Mix in shortening and butter until smooth. Fold in pecans and cherries. Pour into two 9x9-inch pans, bottom and sides rubbed with shortening.

Bake at 350°F for about 40 minutes. Cool. Place in refrigerator overnight, if possible.

Cut into bars 1x2-inches and roll in granulated sugar.

Makes 64 bars.
