POTATO PATTIES 
1 1/3 c. left-over creamed potatoes
1 beaten egg
1/8 tsp. black pepper
3 tbsp. flour
1/8 tsp. salt

Combine potatoes, beaten egg, pepper, salt and flour. Beat with a spoon until it is all mixed. This will be a thick mixture. Melt enough Crisco in a skillet to cover the bottom. When this is warm, take a large spoon and dip out a spoonful and drop in the skillet. Do this until all potatoes are in the skillet. Cook on medium-high heat. Brown on both sides. Take out and put on paper towel. Makes 5 medium size patties.

Another way is to make into patties and dip in flour and brown slowly in butter about 5 minutes on each side.
