POTATO PATTIES 
2 c. leftover mashed potatoes
1 sm. onion, diced
1 egg
3 tbsp. flour
Salt and pepper to taste

Mix all ingredients together. Cover the bottom of frying pan with cooking oil. Put a heaping tablespoon of the potato mixture into the pan and use a spoon to flatten into a small patty. Cook until golden brown on both sides.
