DUTCH POTATO PATTIES 
1 1/2 c. cold mashed potatoes
1 tbsp. butter
1 tsp. minced parsley
2 tsp. cream
1/2 tsp. salt
1/2 tsp. minced onion
1 egg, separated
Pepper
Cornmeal

Make a paste with the potato, butter, salt, pepper, cream, onion, egg yolk and parsley. Mold into patties, dip into beaten egg whites, roll in cornmeal and fry until crisp.
