EASY ONE-PAN GRANOLA
6 c. rolled oats, old fashioned
6 c. total of any or all of these:
Whole wheat flour
Wheat germ
Non-fat dry milk powder
Shredded coconut
Unsalted almonds, walnuts, or pecans
2 tsp. cinnamon
1 c. oil
1 c. honey
1/2 c. water
2 tsp. vanilla extract

Preheat oven to 250 degrees. Warm oil, honey, water, and vanilla in a large rotating pan in the oven. When liquid mixture is warm and thinned, begin adding dry ingredients directly to the pan. Stir with wooden spoon as each dry ingredient is added. Bake approximately 2 hours, stirring every 20 minutes. Watch carefully until toasted to your family's taste.

Remember granola becomes crisper as it cools in the pan. If you have difficulty getting the mixture to taste cooked, try toasting the flours lightly in the oven or by stirring in an iron skillet for a few minutes. Can add up to 2 cups dried fruit when cool. Makes about 14 cups.

We love this recipe. I am making it at least once a week and it is yummy! I have been experimenting and adding some different ingredients like, sesame seeds, dried dates, sunflower seeds, etc. and it is fabulous! Also I've tried different oils, coconut, peanut, sesame seed oil. This recipe is so easy and good. Just the right hint of cinnamon and vanilla in this recipe. I highly recommend it!
