CUCUMBER FETA SALAD 
2 lbs. cucumber (peeled and sliced thinly)
1 sm. red onion, sliced into rounds
8 oz. Feta cheese, crumbled
3 tbsp. chopped mint
2 tsp. rice wine vinegar
2 tbsp. olive oil

Arrange cucumbers and onions in a bowl. Scatter mint and cheese on top. Whisk together oil and vinegar. Pour over salad and toss.
