GREEN TOMATO PIE 
CRUST:

2 c. flour
1/2 tsp. salt
2/3 c. shortening
1/4 c. water
1 egg yolk
1 tsp. vinegar

Mix flour and salt, cut in shortening. Add liquid ingredients and mix well. Knead lightly. Divide into 2 parts.

FILLING:

4 c. THINLY sliced, peeled green tomatoes
1 c. sugar
1 tsp. cinnamon
1 tbsp. cornstarch
1 tbsp. vinegar

Mix sugar, cinnamon and cornstarch. Roll out 1 crust and place in 9 inch pie pan. Fill with 3 layers of tomato slices, sprinkling 1/3 sugar mixture and 1 teaspoon vinegar on top of each layer. Cover with top crust. Sprinkle crust with sugar. Bake 15 minutes at 400 degrees, lower oven to 350 degrees and bake another 30 minutes.
