RYE BREAD | |
1/2 sifter of white flour 2 heaping tbsp. rye flour 1 cake yeast 1/2 c. warm water Dissolve yeast in 1/2 cup warm water in large bowl. Mix flours and add enough warm water to make a soft batter. Let rise double in bulk. Sift in enough white flour to make dough easy to handle. Turn out onto well floured board and knead until smooth and elastic. With wet hands scoop up dough and place in a wet bowl. Let rise to double. Flour the floor of your oven in a wood stove and with wet hands rub water over dough. Place dough in oven and bake at 350 degrees for 1 1/2 hours or until brown. When using an electric stove, flour a baking stone or cookie sheet. |
