SWEET POTATO SOUFFLE 
3 c. cooked yams, mashed
2 eggs
1/2 c. milk
1/2 tsp. salt
1 tsp. vanilla
1 c. sugar

Mix the above ingredients with the mashed yams. Put into a buttered casserole, 9x11.

TOPPING:

1 c. brown sugar
1/2 c. flour
1 c. finely chopped nuts
1/2 stick butter, nearly melted

Mix topping and sprinkle over yam mixture. Bake 30-40 minutes in 375 degree oven.
