SWISS STEAK 
6 tbsp. flour
1 tsp. dry mustard
1 1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. fat
2 lb. chuck steam
1 onion, sliced
1 can tomatoes
Chopped celery
1 clove garlic

Pound seasonings into meat. Cook onion in hot fat until yellow. Remove from skillet. Brown meat well on both sides. Add garlic, tomatoes, and onion. Bake in 325 degree oven for 2 hours.
