ITALIAN STYLE BROCCOLI 
1 1/2 lb. fresh broccoli
2 cloves garlic, minced
1/4 tsp. grated lemon rind
1/4 c. olive oil
2 tbsp. lemon juice
Lemon slices, optional

Trim off large leaves of broccoli. Remove tough ends of lower stalk and wash broccoli thoroughly. Cut broccoli into flowerets. Cook broccoli in a large skillet, covered, in a small amount of boiling water until tender. Drain.

Pour oil into skillet; add garlic and cook over medium-high heat, stirring constantly until bubbly. Add broccoli and lemon juice; toss gently. Cover and cook 1 minute. Remove from heat and arrange broccoli on serving platter. Sprinkle with lemon rind. Garnish with lemon slices, if desired; serve immediately. Yields 6 servings.
