CHEESE BUTTONS 
1 egg
1/2 c. milk
1/4 c. finely shredded Monterey Jack cheese with jalapeno peppers
1/2 c. all-purpose flour

Spray 18 (1 3/4 inch) muffin cups with the non-stick coating or grease with shortening; set aside.

In a medium bowl use a wire whisk or rotary beater to beat egg, milk and cheese together until well blended. Add flour, beat until well combined.

Fill the prepared cups half full with the batter. Bake in a 400 degree oven about 25 minutes or until lightly brown. Makes 18 mini muffins. Great served with salads or as an appetizer.
