CHILI CHEESE STRATA 
1 lb. lean ground beef
1 sm. onion, chopped
1 can kidney or pinto beans, drained
1 sm. chopped jalapeno pepper, optional
1 tsp. chili powder
2 tbsp. flour
3 eggs, lightly beaten
1 c. shredded Colby cheese
1 c. Monterey Jack cheese
1/8 tsp. pepper
1 tbsp. butter
1 c. milk
1 tsp. paprika

Brown beef, onion and pepper. Stir in beans, jalapeno and chili powder. Melt butter in a small saucepan and stir in flour. Cook stirring constantly until well blended. Gradually add milk and eggs, stirring constantly until mixture begins to thicken. Set aside.

Place half the meat mixture into a 2 quart casserole and cover with half the cheese. Repeat layers of meat and cheese. Pour the white sauce over top layer and sprinkle with paprika. Bake at 350 degrees for 40-45 minutes.
