WHITE BEAN CHILI 
2 lb. chicken cubes, browned in olive oil
1 jar mild salsa
1 (8 oz.) chunk of white cheese with hot peppers, grated
1 (48 oz.) can Randall beans (any other white bean will also work)
1 tsp. cumin

Brown chicken in olive oil and add the rest of the ingredients. You can also use soaked Great Northern beans instead of Randall beans. Remove most of the fat by using only chicken breasts, all fat removed, and a low or no fat cheese and add hot peppers.
