TUNA QUICHE 
2 pie crusts
12 oz. sharp Cheddar cheese, shredded
1 lg. can water packed tuna, drained
1/3 c. diced onions
6 eggs, beaten
1 1/2 c. milk
3/4 tsp. Worcestershire sauce
1/2 tsp. dry mustard
1/2 tsp. paprika
Dash liquid hot pepper seasoning

Place cheese, tuna and onions in pastry shells. Combine eggs, milk, Worcestershire, mustard, paprika and liquid seasoning. Pour into shells.

Bake in 350 degree oven for 40 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before cutting. May be reheated in a moderate oven for 10 minutes.

I use Mozzarella entirely or 1/2 Cheddar and 1/2 Mozzarella or try other cheese; pepper, farmers, etc.

You can substitute chopped frozen spinach for tuna or ham, fresh mushrooms.

This is a recipe you can play with and it always seems to turn out good.

I don't cook one pie quite as long and freeze for later serving.
