TUNA RICE QUICHE 
1 (10 oz.) pkg. frozen broccoli, thawed
1/2 - 1 c. shredded cheese (cheddar)
1 c. Minute Rice (dry)
1 c. (6 1/2 oz.) water packed tuna, undrained
1/4 c. grated Parmesan cheese
1/2 tsp. dried dill weed
1/2 tsp. salt
1/4 tsp. pepper
3 eggs, beaten
1 1/4 c. milk or half and half

Option: or 6 ounces cooked chicken

Combine vegetables, cheese, rice, tuna, 3 tablespoon Parmesan cheese and seasonings in 10" microwave safe pie plate or quiche dish. Combine eggs and milk; pour over vegetable mixture. Mix thoroughly. Cover with waxed paper. Cook at medium high (70%) 10 minutes; stir well. Sprinkle with remaining cheese. Cover and rotate plate half turn. Cook 10 minutes longer. Let stand 5 minutes. Serve with lettuce salad or baked apples. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
