TUNA AND RICE QUICHE 
1 (10 oz.) pkg. frozen chopped broccoli
1 1/2 c. cooked rice
3/4 c. (6 oz.) shredded Cheddar cheese
3 eggs
1/3 c. skim milk
3/4 tsp. salt
1 (6 1/2 oz.) can water-packed tuna, drained

Microwave (high) broccoli in paper package (remove foil wrap, if necessary) 5 to 6 minutes or until just about tender. Drain.

Combine rice, half the cheese and 1 egg. Press evenly into bottom and 1/2 inch up sides of 9-inch microwave-safe pie plate or quiche dish. Beat remaining 2 eggs with milk and salt. Top rice mixture with broccoli and tuna; mix lightly. Pour egg mixture over tuna.

Microwave (high), uncovered, 8 1/2 minutes, rotating dish once. Sprinkle with remaining cheese.

Microwave (high), uncovered, 1 to 2 minutes or until center is just about set. Serve cut into wedges.

Rice makes the crust for this easy quiche.

Since microwave ovens vary in power, you may need to adjust your cooking time.
