ZUCCHINI FRITTERS 
1/2 c. diced Monterey Jack cheese
2 eggs
2 tbsp. minced parsley
1 clove garlic, peeled
1/2 c. flour
1/2 tsp. salt
Dash of pepper
4 c. diced zucchini (about 1 lb.)

Combine all ingredients except zucchini in a blender. Blend until smooth. Pour over zucchini and mix well. Drop by tablespoons into 1 inch of hot fat. Fry until brown on both sides. Cover a paper bag with paper towel and place cooked fritters on top of paper towel.
