REAL TEXAS BEANS 
1 pound of beans (almost any will do)
1 large onion, roughly chopped
1 can diced tomatoes with peppers
4 ham hocks per pound of beans
1 bay leaf
1-2 jalapenos (without a little heat you can't call it Texan)
lots of water
about 2 tablespoons garlic powder (or to taste)
pepper
salt (if needed)

This recipe is great for a barbecue or outdoor party. Just double for more people and you can eat it as a meal or as a side.

I'm really not into exact amounts but this will get you started once you start making this you can alter it to your taste.

For best results, soak beans the day before in a pot of water over night (2:1 water to bean ratio). The next morning, rinse beans; transfer to a large pot and fill it up with water and add all other ingredients.

Boil (covered) on medium high heat for 15 to 30 minutes. Make sure to stir and add water when needed. There needs to be at least 1 1/2 to 2 inches of water over the beans during the cooking.

After 15-30 minutes, reduce heat to medium or medium low for as long as possible (preferably 4-6 hours). The longer, the better.

Serves 4 BIG Guys or 6 regular people. (Goes best with homemade cornbread).

Tip: If you have a lot left over, refrigerate it and it gets even better the second day! You can also use the leftovers to make some really good refried beans for tacos the next day.
