OVEN FRIED CHICKEN 
2/3 c. self-rising corn meal
1 tsp. paprika
1/2 tsp. black pepper
1/4 tsp. garlic powder
1/4 tsp. salt (optional)
1/4 c. milk or water
2 1/2 to 3 lb. cut up chicken (8 to 10 pieces)
milk

Heat oven to 375°F. Combine the corn meal, paprika, black pepper, garlic powder and salt. Dip the chicken in milk. Coat in combined dry ingredients. Place chicken on 15 x 10-inch shallow baking dish; lightly brush with melted butter (or spray with butter-flavored Pam).

Bake 50 to 55 minutes or until juices run clear when chicken is pierced with fork.
